The Planning and Zoning Commission approved plans for a new look at Lunch Box in the Weston Shopping Center, part of a transition of the restaurant into a bar and grille.
In their September 9 meeting, commissioners heard again from Lunch Box co-owner Josh Tolk and discussed the completed architectural review of his plans, part of the Weston Village District permit process.
Changes to the building include an entrance that will now face Weston Road, new doors and windows, a refresh of the exterior, and most likely a new name.
Little of Mr. Tolk’s initial design changed as a result of the architectural review, except making one window slightly smaller to more distinctly separate the restaurant from Weston Pharmacy next door.
On the inside, the existing service counter will become a consumer bar. Seating capacity in the restaurant will not be affected. Mr. Tolk previously told commissioners he plans to “continue lunch and dinner service with expanded days and hours of operation, consider bringing breakfast service back in a modified format, and continue takeout and delivery service.”
With P&Z’s approval of the new entrance in hand, Mr. Tolk hopes to open the bar and grille by early spring.
